Tasting Notes

Nose     –   Beguiling aromas of apricots, orange blossom and marmalade, bolstered by subtle spiciness, too – cinnamon and clove. Elegant and seductive.

Palate   –  The generous fruit continues on to the palate, with oranges and apricots in abundance. There’s a little peppery spice, but the soft, succulent fruit takes hold. Nice balance, and nicely crafted.

Finish  –  The spiciness takes over from the fruit and lingers, along with a little barrel char.

 

Our Coments

Harmony – a rather apt word to describe this well-balanced Japanese blended whisky from the Hibiki range. Hibiki Japanese Harmony is made with malt whiskies from the Yamazaki and Hakushu distilleries, as well as grain whisky from the Chita distillery.
The whiskies are drawn from 5 different types of cask, including American white oak casks, Sherry casks and Mizunara oak casks. The blend itself was crafted by the Suntory Whisky blending team, led by Master Blender Shingo Torii. An elegant expression, with wafts of honey, orange, a herbaceous touch or two and light oak.

Tasting Notes

Nose     –   Very fruity, with ripe oranges, apple pie, marmalade and plums (would I have still got those plums if I didn’t know about the plum liqueur maturation? I’d like to hope so). Fresh honeysuckle and nougat aromas,sugared almonds, sponge cake, icing sugar. Expressive and exciting.

Palate   –  Smooth as a snooker ball, with delicious fresh grain, oak tannins and delicately sherried malt. Some clove, pepper and mixed peel as the sherry comes forward. The citrus is here as well, if slightly more tart like lemon or grapefruit.

Finish  –  Spices, apple peel and the last remnants of the finely-tuned grain. Nothing dominates, everything in place – the integration and balance are quite remarkable. The spices seem to build in intensity at the finale.

 

Our Coments

Right, time is cracking on on Friday afternoon, so I’ll make this brief. After a splendid tasting by Suntory at TWE Vinopolis on Wednesday night I was rather disappointed that the 12 year-old Hibiki (which I’d tasted at Whisky Live and thought was excellent) hadn’t been shown. Imagine my delight when the stock turned up this afternoon)
Suntory Hibiki contains bourbon-aged malt from Hakushu, sherry casks from Yamazaki and grain whisky from the company’s Chita distillery.
Intriguingly, a portion of the whiskies used have been aged in casks that used to hold Japanese plum liqueur (don’t know whether that’s for the malt or grain whiskies, though, or if it’s done after the blending).
Apparently the marriage is left to settle for four months before bottling. I also heard that there are only 200 cases of this for Europe on this run, with more not available until late autumn.

Tasting Notes

Nose     –   Sweet and rich aromas of raisins, sultanas and plums. Lots of toffee and butterscotch. Definite honey. A great nose, it’s a pleasure to come back to it between sips.

Palate   –  Same flavours as the nose, initial sweetness with the raisins/sultanas and some softer tropical fruits, like honeydew melon (although that could be the honey poking through again). Caramel/butterscotch again as well. It has a somewhat oaky backbone, with the sweet vanillins yielding to dryer woody/paper notes over time. A pleasant tingle as it goes down, with the hint of something spicy/peppery at the end. A good balanced palate.

Finish  –  Remarkably long-lasting, with a good mix of after-glowing sweetness from the caramel/butterscotch, balanced with a slightly bitter oakyness, and a touch of cinnamon to round it all off.

 

Our Coments

A fantastic Japanese blend, made with aged malt and grain whiskies from Suntory’s three distilleries. Spicy and sophisticated, this is great for catching people out at blind tastings. Recently awarded a Gold ‘Editor’s Choice’ award from Whisky Magazine and picked upthe top prize in its category at the World Whisky Awards 2010

Tasting Notes

Nose     –   Herbal with a dry,twiggy,nuttiness though there’s some sweetness behind which emerges in time. Sensual and weighty with stewed fruit,black butter and a touch of sandalwood.

Palate   –  Quite fat and maybe just lacking in grip.Dried flower,violet. Rich dried fruits. Doesn’t like water.

Finish  –  Ripe and rich. Balanced

Special design, epitomizing the Beauty of Japanese Nature. This Suntory Whisky “Hibiki 21 years” released in 2015, it has Mt. Fuji drawn in austere black and white colors, with Japanese plum, pine and bamboo painted on its skirts, symbolizing happiness and good fortune.
Also echoed is the Japanese sensitivity to the transience of seasons. Deeply aromatic, quintessentially Japanese, and aesthetically appealing, the design perfectly captures the spirit of the “Hibiki”.
Hibiki 21 was named World’s Best Blended Whisky at the 2014 World Whiskies Awards and was

Tasting Notes

Nose     –   Absolutely stunning. Very complex right at first nosing, starting on a very wide array of various aromas such as marzipan, orange marmalade, nutmeg (a lot, really), apricot jam, quinces (lots), chamomile and many others… The oakiness is just perfect. Then gets quite spicy, with still a lot of nutmeg but also ginger, juniper berries, saffron… Also old Sauterne of the highest grade, vanilla crème, bergamot… Exceptional, certainly the most beautiful blend I have ever nosed, although I must confess I haven’t tried many.

Palate   –  A little less classic and surprisingly sweetish for a short while (marshmallows and bubblegum) but it’s soon to get back on track, with an excellent oak p front and a spicy cortege progressively joining in (some nutmeg albeit less than on the nose… white pepper, very sweet curry, something like satay…) Also, some spearmint. Gets maybe just a tad drying at the ‘end of the middle.

Finish  –  Long, certainly oaky but nicely so, still spicy, even a little mustardy (wasabi, of course). Anyway, certainly a blend that will keep most single malts at bay, Scotch included.

 

Our Coments

True masterpiece in the art of blending, Hibiki 30 year old is a remarquable mix of the finest single malt from Yamazaki and Hakushu, aged in different types of casks, and subtly vatted with grain whisky from Chita distillery.
This results in an endless medley of gourmet flavors of raisins, prunes, dried figs, apricot jam and chestnut, all coated with spicy notes of gingerbread and cinnamon. After made you flying through a rich and intense aromatic universe, it will slowly disappear, leaving you with elegance some subtle touches of leather, cedar and brown sugar.
Composed of malt and grain whiskies matured at least thirty years in oak barrels, the Hibiki 30 year old will seduce lovers of whisky with its deep complexity and incredible maturity.
Bottled in its delightful bottle with 30 facets representing 30 years of age, the most mature of Hibiki family, expresses the quintessence of the art of Japanese whisky. This rare and precious whisky is only available on demand causing additional delays in your order process.
